Pollo Guisado
Updated: Oct 16
Some dinners just feel like home before they even hit the table. For our family, Puerto Rican pollo guisado is one of those meals.
It’s warm, comforting, saucy, and made for scooping over rice while everyone gathers around hungry. This recipe is especially close to my heart because it connects our kids to their Puerto Rican family through food, stories, and little kitchen moments that matter.
I’m a mom of four, married to my husband for ten years, and I’m still learning Spanish as we raise our children with more connection to their roots. Some days that looks like practicing words around the dinner table. Some days it looks like music playing while I cook. And some days, it looks like a big pot of pollo guisado simmering on the stove.
This page is designed to be a warm, easy recipe home base for Rivera Cabana. Since I don’t want to guess at your family’s exact version, I’ve left clear placeholders anywhere you’ll need to confirm ingredients, measurements, or cooking steps.

A cozy family dinner starts with a saucy pot of pollo guisado.

How to Make Pollo Guisado

Prepare the chicken.
Cut chicken breasts how you prefer/Trim chicken thighs
Season the chicken.
Season chicken with 1 TBS adobo, 1TBS sazon, 1 tsp salt salt, 1/2 tsp pepper. Mix until the chicken is evenly coated.
You can let it marinate over night or just 15 minutes while preparing your veggies and stew.
Prep
Dice onion, pepper, carrot, and potato. Place potato in cold water and set to the side so it doesn't brown.
Warm the pot.
Heat 1TBS of oil in a large pot, Dutch oven, or caldero over medium heat. This is my favorite caldero to use.
5. Add the flavor base
Add diced onion, pepper, minced garlic and sofrito to pot. Cook until fragrant, about 5-10 minutes.
6. Build the sauce
Add 1 can of tomato sauce, (**Save your can! You'll need it in a minute.). Add 1 packet OR 1TBS of Sazon, 1TBS adobo, 1tsp cumin, 1tsp oregano and 2 bay leaves to your pot. Let simmer for 5 minutes on low-medium heat.
7. Build the stew
Fill tomato can up with water. Pour into your pot. Add carrots, potatoes, chicken, and 1TBS chicken boullion.
8. Simmer until tender.
Bring the stew to simmer, then reduce the heat to medium-low. Cover and cook for 30-40 minutes, or until the chicken is cooked through and tender.
9. Check the sauce.
Taste and adjust with salt or adobo if needed. If the sauce needs to thicken, simmer uncovered for a few minutes.
10. Serve warm.
Spoon the pollo guisado over rice and serve with tostones, avocado, or your favorite family sides.
Helpful Cooking Tips
If you want your stew thicker simmer without a lid. We like ours a little more soupy so we can use the extra sauce to pour over our rice.
Use the chicken your family loves
Some families prefer bone in chicken because it can bring extra flavor to the stew. Others like boneless chicken because it’s easier for kids to eat. Use the cut that makes sense for your table.
Let the sauce simmer gently
A gentle simmer helps the chicken become tender and gives the sauce time to come together. If the heat is too high, the sauce may reduce too quickly before the chicken is done.
Taste near the end
Puerto Rican food is full of flavor, but every seasoning blend is a little different. Taste the sauce once the chicken has cooked, then adjust only after the flavors have had time to blend.
Keep it practical for busy nights
This is one of those chicken recipes that can feel special without being fussy. Once your ingredients are prepped, the pot does most of the work.

Easy Substitution
Every family has its own way of making pollo guisado, and that’s part of what makes it special.
Chicken options

What to Serve With Pollo Guisado
Pollo guisado is cozy on its own, but the sides make it feel like a full family meal.
Serve it with rice
White rice is a classic choice because it soaks up the sauce so well. Spoon the chicken and plenty of sauce over the top, then let the rice catch every bit.
Add tostones
Tostones bring that salty, crispy bite next to the tender chicken. They’re especially good when there’s enough sauce on the plate for dipping.
Slice an avocado
Avocado adds something cool and creamy next to the warm stew. It’s simple, fresh, and beautiful on the plate.
Make it a family-style dinner
Set the pot on the table with a bowl of rice, a plate of tostones, and sliced avocado. Let everyone build their own plate. It feels relaxed, generous, and very Rivera Cabana.
A Little Family Story From Our Table
One of my favorite things about making food from my husband’s culture is how it opens the door to connection. I may not have grown up with every dish, and I’m still learning the language, but cooking gives me a way to learn with love.
Our kids get to see that food can carry family history. They hear Spanish words in the kitchen. They ask questions. They taste something that ties them to people and places they belong to.
For us, Pollo Guisado is Puerto Rican food that feels like a bridge. It’s dinner, yes, but it’s also comfort, culture, and family in one pot.
And as a mom, I love that. I love recipes that feed everyone and leave space for conversation. I love when a meal feels humble and special at the same time. I love when the kitchen smells like someone is being cared for.
